Quesadilla Recipe (Think Ingredients)


  • 1 pack tortilla wrap 

  • 1 red onion 

  • 1 sweet pepper 

  • 150g chadder cheese 

  • 1 can of chopped tomatoes 

  • 1 tsp. all purpose seasoning 

  • 1 tsp .of smokey parpika 

  • 1 tsp. of garlic powder 

  • 1 tsp. of ground cumin 

  • 1 tsp. of ground coriander 

  • 60g of fresh coriander 

  • 1 can of balck beans or kidney beans for vegetarian option.

  • 1 pack of mince any kind


1. First, wash the mince with water and vinegar or lemon, stain the mince to get rid of the excess water. Now place into a mixing bowl and add the following ingredients: paprika, all-purpose seasoning, garlic powder, cumin, ground coriander. Mix well and set aside. 

2. Peel and slice the onion and sweet peppers. In a medium-size frying pan heat 1 tbsp. rapeseed oil for 20 seconds. Now add the sweet peppers and onions, cook for 2 minutes until golden brown, now add, the mince and cook for 3 minutes. Now add beans and tomatoes, allow to cook for 5 more minutes until the mince is golden brown and the vegetables are soft. 

3. Now add 1/2 a cup of water and the fresh coriander to the pan and cover. Leave to cook for a further 10 minutes. Place the tortilla wrap in an oiled frying pan and then spoon 2- 3 tbsp. of the mince mixture, sprinkle some cheese and then top with another tortilla wrap. Allow frying for 2-3 minutes on the side until golden brown. In between frying place a plate on top to get an even flat surface for your wrap. Cut into 4 and enjoy. 

Chef Tip:

This is perfect for snacks, breakfast or packed lunch. Why not use butternut squash with pine nuts for a lovely vegetarian twist.
